This is one of my favorites soups to make when I ran out of ideas for dinner or during the weekend. It gets me out of trouble all the time.  You can make this creamy soup with any vegestable that you have at home.  When I do not have broccoli, I use butternut squash or spinach, or else I combine different vegetables, but the rest of the ingredients and preparation remains the same.

BRoccoli Soup


  • 1 cup (240 ml) skim or low fat milk (or low fat evaporated – my favorite)
  • 1/2 cup (38 g) shredded low fat cheddar cheese
  • 1 1/2 cups (195 g) broccoli, cauliflower, or butternut squash, fresh or frozen, steamed or pressure-cooked
  • 1 teaspoon diced onion
  • 1/2 chicken or vegetable bouillon cube


  1. Place all ingredients into the blender container in the order listed and secure lid.  I have a Vitamix Pro series so I just put it in the “soup” mode.
  2. If you don’t have the Vitamix Blender, then blends until it is completely creamy enough for you.

I have done this recipe so many times that I usually do most of the seasoning to taste as well as the ingredients.  I accompany the creamy soup with a side of white/brown rice, diced/cubed steak, and either croutons or the multi-colored tortilla strips they sell next to the salads.  My kids love to add the accompaniments they want to the soup. So at the end, it becomes a well balanced meal.

Esta es una de mis sopas favoritas cuando se me acaban  las ideas para la cena o durante el fin de semana. Me saca de apuros todo el tiempo. Esta sopa cremosa se puede hacer con cualquier vegetable  que se tenga en casa. Cuando no tengo brócoli, utilizo calabaza o espinacas, o combino diferentes verduras, pero el resto de los ingredientes y la preparación es siempre la misma.


  • 1 taza (240 ml) de leche descremada o baja en grasa (o baja en grasa evaporada – mi favorito)
  • Queso cheddar bajo en grasa rallado 1/2 taza (38 g)
  • 1 1/2 tazas (195 g), brócoli, coliflor, o calabaza, frescos o congelados, cocidos al vapor o a presión
  • 1 cucharadita de cebolla picada
  • 1/2 pollo o pastilla de caldo vegetal


  1. Coloque todos los ingredientes en el vaso de la licuadora en el orden listado tapa y seguro. Tengo una serie Vitamix Pro, así que sólo hay que poner en el modo de “sopa”.
  2. Mezcle por 5-6 minutos o hasta que esté lo suficientemente cremosa para usted.

He hecho esta receta tantas veces que por lo general sazono al gusto, así como también hago con los ingredientes, es decir lo hago al ojo. Acompaño la sopa con un poco arroz blanco o integral, pedacitos de carne cocida, y croutones o tiritas de tortilla multicolor que venden junto a las ensaladas. A mis hijos les encanta escoger los acompañamientos que quieren ponerle a la sopa. Así que al final, se convierte en una comida bien balanceada.
